The 2022 Adelaide Hills Pet Nat is a mix of both red and white varietals, giving a light pink wine with a crisp palate and a floral, turkish delight nose.
Winemaking
Winemaking
A mix of red and white varietals. Pressed and fermented in a small 1000L fermenter. Bottled at 0.8 Baume and fermentation completed in the bottle. It spent 6 months on tirage in cold storage. As the base was not stabilised this wine was cold stabbed in bottle before being disgorged prior to release. It is made without sulfur or the use of any filtration or fining.
